Today's Popsicle: Peaches 'n Cream with Basil + Honey


Recently the mood struck, and I found myself in the kitchen making popsicles again. Three little peaches have been ripening on the counter for far too long, so I decided to start there. Nothing screams summer like a nice ripe peach, am I right?

At our last event, Jeremy made this fantastic dessert and I haven't been able to get it out of my mind since. Vanilla panna cotta (a custard that's a little like pudding and a little like jello all at once) with stone fruit, toasted nuts, and a drizzle of basil. That little drizzle turned the whole thing on its head and made all of the sweet flavors pop!

I set out to create the same affect with these humble popsicles. Not sure if I succeeded, but they really hit the spot.


The good news is that these pops are super easy to make. Is your mouth watering yet?

Peaches 'n Cream Pops w/basil + honey

3 ripe peaches
1/4 cup cream
1/2 cup vanilla yogurt
2 Tbl honey
2 Tbl chopped fresh basil
2 Tbl boiling water

Peel and pit peaches. Roughly chop and set aside. Combine boiling water (I boiled mine in a mug in the microwave), basil, and honey (we love the raw honey from Trader Joe's) and stir until honey dissolves. Throw the mixture into the blender and blend until smooth. Add all other ingredients and blend until smooth. Pour into popsicle molds and freeze for at least two hours.

  1. I love panna cotta, so you had me at panna cotta. : )
    I have never tried panna cotta with basil or popsicles with basil in them, but it sure sounds yummy. thank you so much for sharing the recipe.
